I could say that over and over and over.
That said (over and over and over), I am picky about pie. Not too sweet, not too goopy, and definitely not creamy. I find myself making pie throughout the year, but tomorrow is the BIG DAY. It's Pie Making Day.
Yes, the traditional Pumpkin Pie. I prefer mine with pecans - I need texture - the husband does not - so no pecans - just the traditional standard pumpkin pie. But there's more. There's Cranberry Apple Pie. This is *THE BEST* pie in world - well, it's the best pie to me... a very close second would be rhubarb pie.... but rhubarb is better suited for the Fourth of July...

Add some cinnamon to the pie, add some nutmeg, a splash of lemon juice... experiment and make it your own. And, don't be afraid to make your own crusts too. I use the good old standard Better Homes and Gardens red checkered cookbook recipe, but add a tad bit more salt than they call for, and actual butter. Just make sure to work with very cold butter, work fast, and use ice water. Add the water a bit at a time and fluff it in to the butter/flour mix... don't actually mush and mash mix it in.
